    Rumbo al Norte comes from a 0.3 hectare plot of mixed 70-year-old Garnacha vines and boulders on granite and sandstone-infused mountain soils 1200 metres above sea level. The grapes are sourced from the Alto Alberche Valley in the Sierra de Gredos range.

    Rumbo al Norte is made using biodynamic winemaking methods and conveys pure elegance, with delicate aromas of pure red fruit, impressive acidity and smooth soft tannins. A fantastic Madrid Garnacha.

    Created from a blend of 30 - 60 year old primarily Xarel-lo, and small amounts of Malvasia de Sitges and Xarel.lo Vermell, the vineyards grow on the estate’s hillsides in Can Comas' limestone soil.

    Rupestris evokes the strength of the rock, the purity of the earth, something primitive, rustic, wild, ancient and authentic.

    Initial aromas of citrus give way to pear and ripe melon, quince and soft hazelnut. These gorgeous tones are enhanced by the Mediterranean Sea and herbs, including lavender.

    In the mouth, it’s full of character: glycerine is ample; so too are the fresh, fruity flavours of pear, apricot and peach. The flinty acidic background provides ample tension and an electric, fresh and slightly bitter aftertaste.

    Championing the historical roots of the Penedès D.O., Ramon has reintroduced the much-maligned Sumoll grape, transforming it into the only Rosé of its kind.

    The grapes of the south-facing, 40 year old vines, grown organically in clay-calcareous soils, are placed in 100-year-old concrete tanks where they undergo maceration for 28 hours to extract colour.

    The fresh and intense nose imparts notes of the Mediterranean sea, red apple peel, fresh, wild berries, pomegranate and figs. In the mouth, the fruit is enhanced by Sumoll’s background of anise and bright acidity.

    The finish is fresh, long, dry and slightly bitter, cleansing the palate with a playful acidity.

    Sus Scrofa is Latin for wild boar, the animal chosen as the symbol of Celler Pardas due to its frequent sightings at the vineyard. This wine is also emblematic of Pardas, as the tortured, abandoned vines were painstakingly restored by Ramon and his team.

    Using 100% Sumoll from chalky-clay soil, the wine undergoes maceration and four months of aging in century-old concrete tanks. No oak is used.

    Light to medium purple in colour, with aromas of red and black berries, this is an easy and supremely tasty wine. Distinctive Sumoll tannins are balanced with fleshy, bright fruit.

    As with all Pardas wines, Mediterranean herbs and refreshing salinity are highly evident on the palate.

    This cuvee is made from many different white grape varieties native to the Canary Islands, some of them unidentified, but include Listan Blanco, Albillo Criollo, Marmajuelo, Gual, and Malvasia. The parcels are very old, located between 75-300 meters of elevation right on the Atlantic Ocean. The vines are farmed by 15 different families and Envínate.

    The viticulture in the Taganan area of Tenerife is very old-fashioned: the vines grow untrained, the soil is worked by hand, and no chemicals are used. The wine is fermented with wild yeasts by parcel, with some parcels getting a bit of skin contact, and then raised on the lees in steel vats and barrels for around 8 months.

    This is an intense vino blanco with lots of personality and notes of nuts, smoke, and sea salt.

    Taganan is a village on the North‐Western side of the Teide, on the island of Tenerife. The vines are quite close to the coast. This cuvée blends different white grape varieties from terroirs from Taraconte.

    Margalagua, or “Mother of the Water”, is the name of a small single parcel organically farmed by viticultor José Angel Alonso and Envinaté. This treacherously steep vineyard sits in between 150-250 meters elevation just above the Atlantic Ocean, on the north side of Tenerife. 

    As was tradition with the very old vineyards on Tenerife, Margalagua is mix planted with a number of different indigenous grape varieties, including Listan Negro, Listan Prieto, Baboso, Negramoll and Malvasia Negra. The vines are at least 100 years old, untrained (they grow wild on the ground), and planted on their roots, as is typical of the phylloxera-free Canary Islands.

    The grapes were fermented in old 500 liter barrels with the whole clusters included, and then raised in neutral 500 litre French oak barrels for 11 months. At bottling a touch of SO2 is added, but there is no fining or filtration.

    Parcela Margalagua is nothing short of profound.

    There is more depth and complexity than in the village red... a tantalizing mixture of pepper and stones, pungent aromatics, with wonderful deep umami notes, high-toned citrus, spice and flowers.

    The wine constantly changes in the glass, showing great elegance. With a seductive, silky texture, Margalagua delivers great acidity and length. It ends with a strong stony sensation and salty marine notes.

    Like the Blanco, this wine is made from many different red grape varieties native to the Canary Islands. They include Listan Negro, Listan Gaucho and Malvasia Negro. The parcels are very old and planted in between 75-300 meters of elevation right on the Atlantic Ocean. Like the Blanco, the vineyards are farmed by the same 15 different families and Envínate.

    The wine is wild yeast fermented with 30% whole grape clusters in open plastic tubs and concrete tanks. It is then raised in small tanks, then aged in 225 and 500 litre barrels for around 8 months.

    This is a fresh and aromatic red, with notes of spice, smoky minerals, and dark fruits. Bright acid, pepper and notes of dry-aged meat mingle in the mouth, leading to a long, satisfying finish.

    Tio Uco is 100% Tinta de Toro (Tempranillo), growing in clay and limestone soil, sourced from three sites in Toro. Hand harvested and de-stemmed, there is a 24-48 hour pre-fermentation maceration, followed by a native yeast fermentation and 20 day maceration.

    Alvar is making unusually fresh wines in Toro using organically farmed 25-40 year old vines. With only a gentle maceration, the wine is aged for 5 months in neutral French oak barrels.

    Aromas are wild and heady, full of fermenting berries, black cherry compote, incense and clove, with a jazzy, light opening, dissolving into a fun and full flavoured palate of cassis, cranberry, cola, salt plums, balsamic, wild rose, and bitter herbs on the finish.

    Substantial and spicy, but light on its feet, this is a lovely Toro for everyday drinking pleasure.

    Las Uvas de la Ira is made with maximum avoidance of any aggressive procedure, therefore undergoing gentle but long macerations, with 100% stalks, utilizing indigenous yeasts and large volume containers.

    The wine is matured for 10 months in 2000 or 3000-litre large French oak casks.

    Dark cherry coloured, this is a wine of low density with an abundance of tears yet without any tinging of the glass. With an elegant nose, it is serious and profound, fresh and very fruit-driven, with spicy hints of pepper, mineral and faintly balsamic.

    Superb acidity dances on the palate, with less fruit intensity than on the nose, Medium weight in structure and body, it is a tremendously easy to drink Garnacha.

    Vagüera is a single 0.5 ha parcel of mixed vines located at 900–950 meters above sea level just outside the border of Toro in the village of El Maderal.

    There is a bewildering array of varieties planted here dating back to 1921. It is mostly Albillo in its various guises: Albillo Real, Albillo Rojo and Albillo Negro. Other recognizable varieties include several types of Moscatel, Godello, Verdejo, Palomino and Malvasia. (The remainder have yet to be identified!)

    The clusters were pressed, then the juice was allowed to settle and ferment in barrique with indigenous yeasts. The wine was then matured in a 300-liter oak barrel for ten months followed by one month in stainless steel.

    On the nose, there is a mixture of flowers and herbs, with a touch of fennel and beeswax. Freshness is provided by the high altitude. Subtle complexity is the result of the use of a wide mix of varieties. As there is Moscatel in the vineyard, there is a distinct touch of this grape in the wine.

    Vaguera has a lot of character. It’s tasty and finishes with a saline sensation.

    A rich, deep single-vineyard red, Vinya Goretti is made from 100% Carinyena grapes on 80 year old vines in the village of Marca in Montsant. The vineyard is located close to a deep ravine and the soils are calcareous clay and slate-based soils.

    Vinya Goretti is a deep red cherry with a good deal of orange peel,  liquorice, mint on the nose. Balanced in the mouth with crisp red fruits, deep on the mid palate and smooth on the finish finish.

    The Xarel-lo 2011 is one the estate’s longest aging wines due to the 60+ year old vines' adaptation to the semi-arid climate and limestone soils, high alcohol content and bracing acidity.

    Perfectly expressing the Pardas approach, this wine is made from 100% Xarel-lo. A considered use of new and old oak and concrete adds further depth and complexity to the wine.

    There is a fantastic intensity to the nose. Reflecting the landscape of the property, strong rosemary, fennel, white truffle, liquorice and subtle bay leaf are evident. In the mouth, the wine delivers ample weight, yet elegance. Ripe stone fruit, sesame and ginger is balanced by persistent minerality and acidity. The finish continues with liquorice and an intriguing bitterness.
