    Sus Scrofa is Latin for wild boar, the animal chosen as the symbol of Celler Pardas due to its frequent sightings at the vineyard. This wine is also emblematic of Pardas, as the tortured, abandoned vines were painstakingly restored by Ramon and his team.

    Using 100% Sumoll from chalky-clay soil, the wine undergoes maceration and four months of aging in century-old concrete tanks. No oak is used.

    Light to medium purple in colour, with aromas of red and black berries, this is an easy and supremely tasty wine. Distinctive Sumoll tannins are balanced with fleshy, bright fruit.

    As with all Pardas wines, Mediterranean herbs and refreshing salinity are highly evident on the palate.

    Championing the historical roots of the Penedès D.O., Ramon has reintroduced the much-maligned Sumoll grape, transforming it into the only Rosé of its kind.

    The grapes of the south-facing, 40 year old vines, grown organically in clay-calcareous soils, are placed in 100-year-old concrete tanks where they undergo maceration for 28 hours to extract colour.

    The fresh and intense nose imparts notes of the Mediterranean sea, red apple peel, fresh, wild berries, pomegranate and figs. In the mouth, the fruit is enhanced by Sumoll’s background of anise and bright acidity.

    The finish is fresh, long, dry and slightly bitter, cleansing the palate with a playful acidity.

    The Xarel-lo 2011 is one the estate’s longest aging wines due to the 60+ year old vines' adaptation to the semi-arid climate and limestone soils, high alcohol content and bracing acidity.

    Perfectly expressing the Pardas approach, this wine is made from 100% Xarel-lo. A considered use of new and old oak and concrete adds further depth and complexity to the wine.

    There is a fantastic intensity to the nose. Reflecting the landscape of the property, strong rosemary, fennel, white truffle, liquorice and subtle bay leaf are evident. In the mouth, the wine delivers ample weight, yet elegance. Ripe stone fruit, sesame and ginger is balanced by persistent minerality and acidity. The finish continues with liquorice and an intriguing bitterness.

    Produced only in the best vintages and with the best grapes from the 2.7ha La Barraca property, the blend is comprised of 63% Cabernet Franc and 37% Cabernet Sauvignon.

    The Cabernet Sauvignon undergoes malolactic fermentation in barrels and the Cabernet Franc, in deposits. The wine is then aged in French oak barrels and lightly filtered before bottling.

    Intense cherry red in colour, with fine violet reflections, abundant and dense tears fall down the glass. On the nose, the intense and powerful notes of red fruit are fresh, ripe and candied. This is enhanced by toasty aromas provided by the oak.

    On tasting, the wine is equally intense, warm and has a wide attack. Fleshy, sweet and tasty on the mid-palate, the wine expands to show ripe fruit, well balanced notes of tobacco and hints of fine sherry. The ripe tannins lead to a long finish that delivers concentrated dried black fruit and herbal spice.

    Created from a blend of 30 - 60 year old primarily Xarel-lo, and small amounts of Malvasia de Sitges and Xarel.lo Vermell, the vineyards grow on the estate’s hillsides in Can Comas' limestone soil.

    Rupestris evokes the strength of the rock, the purity of the earth, something primitive, rustic, wild, ancient and authentic.

    Initial aromas of citrus give way to pear and ripe melon, quince and soft hazelnut. These gorgeous tones are enhanced by the Mediterranean Sea and herbs, including lavender.

    In the mouth, it’s full of character: glycerine is ample; so too are the fresh, fruity flavours of pear, apricot and peach. The flinty acidic background provides ample tension and an electric, fresh and slightly bitter aftertaste.

    Vinified in the traditional way, the base rosé wine completes secondary fermentation in the bottle with no added sugar. Afterwards, Martínez Brut Nature Rosé is aged for 9 months prior to its commercial release.

    A pale rose colour with tints of blue and light silver, it possesses small, persistent bubbles with an elegant release.

    Offering a very sweet bouquet with notes of red fruits and candied redcurrant, it shows sweet fruit with a refreshing, smooth and subtle, creamy sensation. The finish is long and delicate.

    Produced using a blend of Xarel-lo, Macabeu and Parellada, the wine is aged for a minimum of 18 months before it’s released.

    Straw yellow in colour, with a lovely lime-green hue, the Brut Reserva 18 has medium bubbles that gently drift to the surface.

    The tropical notes on the nose of pineapple and banana are supported by a denser, more robust butter and woodsy background. In the mouth, the wine has very good acidity and a lush round mouth feel. Big almond, ripe pear, lemon cream, and a touch of caramel and butter rewards on the finish.

    The result is one of the most unique sparkling wines produced not just in Spain, but anywhere in the world!

    Attractive pale and soft salmon pink in colour, the fine, persistent bubbles form a dense crown. Fresh and highly complex aromas with smoky tones present a subtle nose and red fruit finish. The palate is balanced, broad, savoury, rich and elegant. Its evolution in the glass shows varietal character, ending with a very long and elegant finish.

    This is a dynamic Cava, which challenges the drinker. Although it can be consumed on its own, it really does demand food to bring out its full enjoyment.

    When paired with an excellent accompaniment, Cava Rosae is a revelation!

    The Jumilla from Casa Castillo is made from younger vines sourced mainly from La Valle vineyard. Primarily Monastrell (Mourvedre), in any given vintage, 8-15% of the blend includes Syrah and Garnacha. After a natural fermentation in tank the wine is aged for 8-9 months in neutral 500 liter French oak barrels, concrete tanks or foudre.

     

    "Like all the wines from the property, fermented with indigenous yeasts, in this case with grapes from different plots, and matured in used oak barrels for eight to nine months Juicym primary, incredibly fresh with a vertical palate, longer than wider, like a hypothetical blend of 2013 and 2015, cool but dry. This is always great value.

    The grapes for Mengoba's Brezo Blanco come from several plots. Those of Valtuille and Villafranca are more clay based while the vines in Carracedo are stony and those in Espanillo are slate.

    The wine is fermented with wild yeasts in steel vats and then raised on its fine lees with weekly battonage for 5 months. No oak is used at this level.

    This lovely cuvée is a blend of Mencia and Alicante Bouschet, harvested from Gregory Perez' Horta and Villafranc vinyeards in Spain's Bierzo region.

    The vines grow on soils infused with decomposed slate with sandy areas. The ground is worked in an artisanal way, on a small scale with three passes with ploughs pulled by two cows. The grapes are farmed sustainably and hand-harvested.

    The wine is aged for six months in 5,000 L foudre vats. Brezo Tinto offers fruit, balsamic and spice notes on the nose. The palate has a juicy, medium-bodied and soft texture.  A lovely red wine to pair with salads or apéritifs.

    This mountain white is made with 100% Godello hand-harvested from the best grapes on Gregory's small plots in the villages of Cacabellos, Valtuille and Villafranca in Spain's Bierzo region. The Valtuille and Villafranca soils are infused with calcerous clay, while Cacabellos' soils are infused with stone. 

    The wine was fermented with wild yeasts in wooden foudre and raised for ten months on fine lees in two 4,000 litre oval wooden vats.  There is a wonderful smoky minerality to this wine with notes of grapefruit, powder and savoury. 

    The finish offers deep earthy mineral notes, and a perfumed, mouthwatering length.

    Blanc del Terrer is a single-vineyard white made from Macaebo in Spain's Tarragona DO. The vines are planted in soils composed of lumaquela, which is the local name for a type of marine fossil in  that brings a distinct minerality to the grapes grown in this terroir. 

    Refreshing mineral white from Catalunya. Light yellow linden color, fresh nose of pineapple and butter toast, medium acids, salt finish reminds you of the sea in Tarragona region. 

    Harvest was carried out by hand. The grapes were then cold-macerated, de-stemmed and gently crushed. Finally, the resulting juice was fermented in stainless steel tanks and aged for 6 months on its lees.

    Nus del Terrer is the flagship red wine from Vinyes del Terrer. The wine is crafted from over 40-year-old Garnacha vines, complemented by some Cabernet Sauvignon. They are cultivated in soils rich in Lumaquel·la, a unique marine fossil mineral which give these vines a uniquely mineral character. 

    After finishing the process, the wine was pressed and passed by gravity into 5,000-litre new and used French oak barrels from Allier, Nevers and Vosgues to complete malolactic fermentation.

    Intensely aromatic, the Garnacha offers sweet, juicy red fruit nuanced with spices like coffee and cocoa, playing off of aromas of of pulpy green vegetables from the Cabarnet Sauvignon.

    Intense and flavourful, Nus del Terrer is a silky wine with a substantial volume. Intense remembrances of cherries, a hint of blueberries and a deep minerality entwined in perfect harmony. Tips of black pepper, tobacco and flowers.

    Josep Serra gives us a fantastic textured Mediterranean white, beautifully rich, yet free of excess glycerol and florality. In DO Terra Alta, Josep grows Garnacha Blanca from several plots around the village of Gandesa, in the locale known as Aucalà. The landscape here is dominated by Mediterranean pine. 

    The wine features lovely fruit- juicy and fine in the cut green apple and green melon spectrum. The palate is textured and savoury without cloying. It’s waxy and deep with nice lift and a wonderful, textural acid line showing off the fresh chalky-mineral soil.

    There’s very well controlled build, which honours line above all. It’s limpid and beautifully nuanced with saltiness reflecting the former sea bed soils.
