SantYuste Paraje Fuentecilla starts life at 820 metres above sea level. These are pre-phylloxera varietals that are over 130 years old and planted in aeolian sandy soils with sedimentation and marine fossils among the vines. They are cultivated using environmentally-friendly agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.
When the grapes reach the winery, they are partially destemmed ready to be made into the SantYuste Paraje Fuentecilla wine. They are pressed directly, without racking and the resulting must ferments spontaneously with native yeasts in clay jars. It remains there with its lees for 6 months. It is finally bottled without being clarified, filtered or adding sulphites.
SantYuste Paraje Fuentecilla is a natural white wine that reveals the lighter side of the SantYuste wine collection. A Verdejo with an open and sweet profile.
