Las Botas is bold white wine made from 100% Godello, from small plots with 70-year old vines. Only 500 bottles of this rare wine were produced by winemaker Gregory Perez.
Grapes are hand-harvested, destemmed and crushed . Once the grapes are destemmed and crushed, they go through pre-fermentation maceration. The grapes are then are poured into two 150-year old Manzanilla butts, where the wine ferments with indigenous yeasts.
Las Botas is a unique blend of the freshness and rustic nature of northern wines with the intensity and boldness of southern wines.
