Suc del Saulo (translates to Juice of Granite) is made from roughly equal portions of Downy Grenahce (Garnacha Peluda) and Carignan, and a touch of Syrah (10%). 2019 was a fabulous vintage with good rainfall, not extremely hot,
It’s fermented with indigenous yeast and 25% of whole cluster, and raised entirely without oak to preserve the bright fruit and incredible texture inherent in the wine.
Fresh blackberry, blackcurrant and raspberry flavours offset by an intense mineral line and incredibly smooth fruit tannins. There’s a touch of botanicals with thyme and bay leaf on the palate, and elegance in mouth!
