This wine is produced for the Amadip Esment Foundation, a charity in Mallorca supporting that supports those with mental health issues.
The 2018 Gallinas y Focas is pure Mantonegro from 40-year-old vines on call vermell soils in the villages of Santa María and Binissalem. Seventy percent of the volume fermented in 4,000-liter oak vats with indigenous yeasts and the rest in 500-liter oak barrels; Francesc Grimalt likes to make a semi-carbonic maceration when he works with Mantonegro.
It matured in foudre for six months, in barrique for a further 12 and kept in bottle for at least another six months. It's floral, peachy, very aromatic and delicate. Mantonegro tends to deliver rounder and gentler wines than Callet, and it's quite aromatic and has integrated acidity.
This vintage feels particularly lively in the palate with very fine tannins and beautiful texture, silky and elegant. It's the finest vintage for this bottling.
