The Vibe Not Cava. Not Champagne. The ancestral method is older than both — a single fermentation that starts in tank and finishes in the bottle, trapping its own CO₂ without any secondary intervention. Fewer than 5,000 bottles are made, and the grape — Malvasía de Sitges — is one of the rarest indigenous white varieties in Catalonia. Leo Gramona calls it "the future Riesling of our region." At $46, it's one of the most interesting bottles in the Cosecha portfolio.
The Taste Lemon verbena, lime, and freshly pressed grapefruit on the palate, with ripe quince and a touch of yellow apple giving a firm, crunchy bite. A subtle salty note reflects the terroir, while a hint of almond skin and brioche from lees contact adds texture without weight. The finish is long, citrus-fresh, and clean. The bubbles are soft and integrated — nothing aggressive, just a persistent, lively mousse.
The Story Leo and Roc Gramona are cousins and sixth-generation members of the Gramona sparkling wine family in Penedès. When their parents invited them to join the family business, they agreed on one condition: they wanted to make their own wines, outside the family estate. L'Enclòs de Peralba was the result. The Pét-Nat is farmed organically on chalky clay soils at 265 metres, with harvest timed to fruit or flower days and coinciding with the rising moon, followed by direct pressing at 60% extraction and cold racking before spontaneous fermentation begins. The wine is bottled before fermentation completes — the CO₂ is its own, earned naturally.
Best Enjoyed With Serve well chilled at 7–9°C. Oysters, ceviche, grilled white fish, or patatas bravas. Also honest enough to drink on its own on a Tuesday.
