Key Vinification Details: After hand harvesting and light foot crushing, the juice undergoes fermentation with native yeasts in a permeable blonde clay vat by Carles Llarch. This innovative approach is key: 5 months of aging on the lees in the clay provides a unique glyceric texture and slight oxidative complexity. The final 8 weeks spent in pre-used Amontillado barrels adds another layer of profound depth and character. The result is a vibrant, energetic Chardonnay that balances rich texture with electric, upright acidity—a true expression of Sanlúcar de Barrameda's Albariza.
