La Quimera 2021

A red wine made from 100% Pinot Noir from Jerez de la Frontera. Manual harvest in several passes, micro-vinification in open deposits with one hundred percent whole bunches. Followed by a two-week post-fermentation maceration. Pressing extraction at 50%, 'elevage' in barrels of second-and third-year use of Taransaud & François Freres made cooperages. The wine is only racked once and for bottling. Elegant and ethereal but also structure and weight in mouth!
