Like the Blanco, this wine is made from many different red grape varieties native to the Canary Islands. They include Listan Negro, Listan Gaucho and Malvasia Negro. The parcels are very old and planted in between 75-300 meters of elevation right on the Atlantic Ocean. Like the Blanco, the vineyards are farmed by the same 15 different families and Envínate.
The wine is wild yeast fermented with 30% whole grape clusters in open plastic tubs and concrete tanks. It is then raised in small tanks, then aged in 225 and 500 litre barrels for around 8 months.
This is a fresh and aromatic red, with notes of spice, smoky minerals, and dark fruits. Bright acid, pepper and notes of dry-aged meat mingle in the mouth, leading to a long, satisfying finish.
