The Vibe Miraflores is the pago that convinced the wine world Palomino could be great without fortification. At 45–65 metres above sea level on the Atlantic edge of Sanlúcar, the estate sits where the ocean breeze, the chalk, and the heat converge in a way that exists nowhere else in Jerez. This is Ramiro Ibáñez's benchmark bottling — the wine he uses to argue that albariza soil, not alcohol, is the point.
The Taste On the nose: mojama, salicornia, and a chalky mineral backdrop. On the palate: super saline, smooth, and round, with a lingering finish where notes of old oak add length without taking over. The flor veil gives it a savory yeast complexity — citrus fruit, dry stone, fragrant herbs, and a fine spice — with elegance and good acidity driving the length. This is the coastal, more linear sibling to Paganilla and El Reventón: less muscular, more whisper.
The Story Five plots across Miraflores Alta and Baja, one of the most celebrated pagos in Sanlúcar, facing west on three distinct albariza soil types: Lentejuelas (chalky/clay), Lustrillo (iron-rich), and Tosca Cerrada (dense, cement-like). Each delivers a different texture — Ramiro blends them to build structural complexity no single soil could produce alone. Grapes are hand-harvested and pressed 45–50% whole-cluster into old 600-litre Jerez botas for spontaneous fermentation without temperature control, then aged eight months total including four months under a natural veil of flor. Some barrels are up to 150 years old. Bottled unfined, minimal sulphur.
Best Enjoyed With Serve at 8–10°C, wider glass preferred. Anchovies, fried croquettes, salty almonds, grilled sole, or gambas al ajillo. The salinity makes it one of the most food-driven whites in the Cosecha portfolio.
