The Origin: A single-vineyard Verdejo from Cantarranas — the 5.5 hectares at 700 metres, on sand, pebble and limestone, that the whole estate grew out of. Beatriz Herranz's mother replanted this plot to sell the grapes, as growers in La Seca did; the single barrel Beatriz held back from an early harvest persuaded everyone who tasted it that the grape had been badly misunderstood. Organic, dry-farmed, and still the centre of everything the estate does.

The Profile: The most concentrated of the three whites, and the one that settles the argument about Verdejo. Barrel texture and weight of the kind white Burgundy drinkers know, with the salt of La Seca's limestone still running underneath it — the same line that shows as freshness in Cucú and as minerality in Loseco, here carrying the most around it. 13.5% alcohol, pH 3.29. 94 points from Luis Gutiérrez in The Wine Advocate.

The Craft: Fermented and matured in oak barrels of mixed size, age and origin, with a small proportion of new oak introduced for this vintage, and worked on its lees throughout. The barrels are there for texture and breadth rather than for flavour — nothing about this wine reads as oaky. 13,277 bottles, bottled November 2025.

The Pairing: Serve at 10–12°C, not colder — this one needs room to open. Roast chicken, grilled lamb, turbot or monkfish with butter, mushrooms, aged sheep's cheese, and roasted vegetable dishes. If barrel-fermented Chardonnay is what you usually reach for, start here. Drinking now through 2032.
