The Vibe "Chickens are funny and seals clap." That was the explanation from the members of Amadip Esment when asked why they named the wine Gallinas y Focas (hens & seals). Amadip Esment is a Mallorcan foundation for adults with intellectual disabilities — their members participate fully in the harvest, fermentation, and winemaking process. They named the wine, designed the label, and made it. 4 Kilos Vinícola — the project of oenologist Francesc Grimalt and Sónar festival co-founder Sergio Caballero — provided the winemaking framework, the cellar, and the Manto Negro fruit. The result earned 94 points from Wine Advocate. It is the most human wine in the Cosecha portfolio.

The Taste A pale red with real depth — developed nose showing decayed roses, dry leaves, and a Mediterranean quality reminiscent of Château Rayas, with notes of cherries in liqueur despite 13% alcohol. Medium-bodied palate with chalky tannins, serious and structured, better with food than without. Round and gentle in style, finely fruited and delicately structured — dark spice, cold tea, and earth, vivid and alive with electric minerality. 17,103 bottles and 89 magnums produced. Fermented partly in 4,000-litre foudre and 30% in 500-litre barrels, then six months of bottle aging before release. The patience shows.

The Story The Amadip Esment members are fully active participants — not observers. They pick the fruit, hand-crush it, work the cap in open fermenters, and pump over the must. The winery built specifically for this project at the Amadip Esment estate in 2012 means the wine is literally made in the foundation's own building — not as a charity add-on to someone else's cellar, but as a full production facility where the foundation's members are the winemaking team. Manto Negro — Mallorca's most important indigenous red variety — grows on clay-limestone soils at 139 metres in Binissalem, the island's most established red wine zone. The 2020 vintage brought a warm, dry summer with rain arriving at harvest in October — grapes were picked early to avoid it, preserving the freshness and aromatics that define the wine.

Best Enjoyed With Serve at 15–16°C. Roast lamb, Mallorcan lamb shoulder (anyell rostit), grilled pork, aged sheep's cheese, or tapas. Decant briefly — the wine has more structure than its pale colour suggests.
