The Origin: Mas Candí is Ramon Jané and Mercè Cuscó, in the village of Les Gunyoles at the edge of the Garraf Massif in the Penedès. The Cuscó family has farmed this land since the 1600s and for generations sold its grapes to the large Cava houses; in 2006 the couple began bottling under their own name. Indomable means "untameable". It is half Xarel·lo and half Sumoll, a red Penedès grape, both from the estate's old organic vineyards. The Sumoll is pressed straight off its skins, so the wine stays pale.

The Profile: Yellow with slight ochre shades and a fine, persistent bead. Red fruit and brioche on the nose, baked apple on the palate, with acidity and freshness that have held up through the long ageing. 92+ points, The Wine Advocate, which also notes a balsamic edge and calls it still young and very dry. 12.14% alcohol, 5.44 g/l acidity, pH 3.16, 0.73 g/l total sugar.

The Craft: Traditional method with wild yeasts. Bottled for its second fermentation in May 2019 and disgorged in December 2025, after six and a half years on the lees; Corpinnat's minimum is 18 months. 4,000 bottles.

The Pairing: Serve at 4–6°C, or a little warmer to let the aged character show. Roast chicken, mushroom rice, aged Manchego, jamón.
