The Origin: Mas Candí is Ramon Jané and Mercè Cuscó, in the village of Les Gunyoles at the edge of the Garraf Massif in the Penedès. The Cuscó family has farmed this land since the 1600s and for generations sold its grapes to the large Cava houses; in 2006 the couple began bottling under their own name. Segunyola is one of the old names of Les Gunyoles, and the family treats this wine as the village's representative, because Xarel·lo is the most widely grown grape there. The vines are more than 65 years old and were planted by the winemakers' grandparents.

The Profile: Straw yellow with fine bubbles. The winery notes fruit and butter on the nose and a creamy, persistent palate. 93+ points, The Wine Advocate, whose note picks out fennel, aniseed and wild herbs, high acidity and a bone-dry finish, with a drinking window to 2032. Brut Nature, 11.45% alcohol, 7.39 g/l acidity, pH 3.01.

The Craft: Hand-picked into 10 kg boxes and pressed directly. Fermented mostly in stainless steel, with about a quarter in used French oak. Second fermentation in bottle, then four years on the lees before disgorgement in March 2026; 6,256 bottles. Corpinnat is a collective brand of Penedès growers, founded by producers who left the Cava D.O.; it requires hand-harvested organic grapes and at least 18 months on the lees.

The Pairing: Serve at 6–8°C. Oysters, fried fish, jamón, or a fennel and citrus salad.
