The Story: Mas Candí is Ramon Jané and Mercè Cuscó, in the village of Les Gunyoles at the edge of the Garraf Massif in the Penedès. The Cuscó family has farmed this land since the 1600s and for generations sold its grapes to the large Cava houses; in 2006 the couple began bottling under their own name. Tinc Set uses the three traditional Penedès sparkling grapes from the estate's own younger vineyards, 10 to 25 years old, on calcareous clay.

The Profile: Straw yellow with fine bubbles. Apple and ripe fruit on the nose; fresh and fruity on the palate. Bone dry at 0.41 g/l residual sugar, 10.55% alcohol, 5.64 g/l acidity. Because it is never disgorged, the yeast sediment stays in the bottle, so some haze is normal.

The Craft: Hand-picked into boxes, given a short cold maceration and pressed directly. The wine undergoes a single fermentation that finishes in the bottle, with indigenous yeasts, and is not disgorged. No sulphites added. Bottled 29 September 2025. 10,386 bottles.

The Pairing: Serve at 4–6°C. An aperitif wine: anchovies, olives, fried calamari, croquetas.
