The Origin: From old vines above 50 years, planted between 500 and 600 metres in Alijó and Barcos, in the Cima Corgo — the same high, cool sites Pedro Coelho draws his reds from, turned instead into a rosé built for freshness rather than power.

The Profile: Clean, light red in colour. The nose carries real minerality alongside strawberry and cherry. On the palate it's vibrant and crisp — saline, mineral, with a structure and mouthfeel from the old vines and lees ageing that most rosé doesn't bother with. 10.8% alcohol, with real ageing potential rather than a wine built to drink within the year.

The Craft: A blend of Tinta Roriz, Touriga Franca and Tinta Barroca, picked in the second week of September to keep natural acidity and a contained alcohol level. After sorting, the best grapes are gently pressed and settled for 24 hours, then ferment spontaneously with indigenous yeast — no cultured yeast, no temperature control, no battonage. The wine ages in stainless steel on its fine lees (sur lie) until bottling, which is where the texture comes from.

The Pairing: Serve at 10–12°C. Good on its own, and especially with lighter fish, white meat, poultry, and pasta.
