Camino Novo is a blend of 85% Mencía and 15% Alicante Bouschet from 70 year-old vines in a south-east facing single parcel located in Amandi, at 430 meters elevation. The grapes are foot-stomped and fermented with whole-clusters in a small open vat, with daily pigeage.

The wine is then aged for 12 months in 500-litre neutral French oak barrels. At bottling a touch of SO2 is added, but there is no fining or filtration.

    Tiny quantities are made.

Like the other Lousas wines, it is marked by extreme purity, lifted aromatics and delicious savouriness.

Initial tightness gives way an ethereal, very focused wine, with great mineral depth. There are exotic floral notes, herbs and a delicious, mouth-feel that makes this Mencía wine so intriguing.

Seoane is a single parcel located in the Doade area of the Amandi subzone, with pure slate soil. The vineyard faces southwest, and the Mencia vines are at least 80 years of age.

This site yields wines that are upfront and very Atlantic.

The grapes were foot-trodden with 100% whole grape clusters, wild yeast fermented in open-top bins, and raised for 11 months in older 500L French barrels without racking. At bottling, a touch of SO2 is added, but there is no fining or filtration.

This is a classic example of Ribeira Sacra wine, yet with extra dimension.

    Bright. Silky structure. Superb!

Lousas is the name for the type of slate soil that predominates in the Ribeira do Sil and Amandi sub zones of Ribeira Sacra. The slate serves a great purpose, heating up during the daytime sun, helping the grapes ripen, and also imparting minerality and intensely floral and spicy aromatics that are the trademarks of Ribeira Sacra wines.

Aldea means “village” in Galician dialect. It’s Envínate’s goal to produce single parcel, as well, as village wines in each region they work. This particular wine is a blend of different parcels of Mencia, at least 60 years of age, planted between 400-600 meters of elevation.

Fermented with wild yeasts in open top tubs, the wine is then raised in old 300 and 400 litre French oak for 11 months with no racking. No SO2 is added until bottling, and neither stabilization nor filtration are employed.

One of the finest exponents of the Ribeira Sacra, the wine has a lovely crimson colour. In the mouth, the red fruit smells very pure, with bright cherry. This sweet fruit flavour is balanced by chalky tannins and fresh acidity. This wine has lots of life and complexity.

Cabernet Franc (65%), Cabernet Sauvignon (24%) and Sumoll (10%) varietals come from the vineyards that best reflect the terroir of the property.

Free of herbicides, pesticides or other chemicals, the hand-picked grapes are subjected to a variety of vinification techniques to bring out their singular qualities, as does the 12 months of aging in French oak.

The result is a gorgeous reflection of the best of Penedès.

Rich ruby in colour, the wine has abundant, fine legs. The nose is serious and intensely fragrance, showing a balsamic background, with aromas of black pepper, fresh plums and hints of candied oranges and pencil lead. In the mouth, the wine seduces and expands, providing plenty of fleshy, black fruit. The persistent tannins give way to a long, elegant finish.

Created from a blend of 30 - 60 year old primarily Xarel-lo, and small amounts of Malvasia de Sitges and Xarel.lo Vermell, the vineyards grow on the estate’s hillsides in Can Comas' limestone soil.

Rupestris evokes the strength of the rock, the purity of the earth, something primitive, rustic, wild, ancient and authentic.

Initial aromas of citrus give way to pear and ripe melon, quince and soft hazelnut. These gorgeous tones are enhanced by the Mediterranean Sea and herbs, including lavender.

In the mouth, it’s full of character: glycerine is ample; so too are the fresh, fruity flavours of pear, apricot and peach. The flinty acidic background provides ample tension and an electric, fresh and slightly bitter aftertaste.

Championing the historical roots of the Penedès D.O., Ramon has reintroduced the much-maligned Sumoll grape, transforming it into the only Rosé of its kind.

The grapes of the south-facing, 40 year old vines, grown organically in clay-calcareous soils, are placed in 100-year-old concrete tanks where they undergo maceration for 28 hours to extract colour.

The fresh and intense nose imparts notes of the Mediterranean sea, red apple peel, fresh, wild berries, pomegranate and figs. In the mouth, the fruit is enhanced by Sumoll’s background of anise and bright acidity.

Sus Scrofa is Latin for wild boar, the animal chosen as the symbol of Celler Pardas due to its frequent sightings at the vineyard. This wine is also emblematic of Pardas, as the tortured, abandoned vines were painstakingly restored by Ramon and his team.

Using 100% Sumoll from chalky-clay soil, the wine undergoes maceration and four months of aging in century-old concrete tanks. No oak is used.

Light to medium purple in colour, with aromas of red and black berries, this is an easy and supremely tasty wine. Distinctive Sumoll tannins are balanced with fleshy, bright fruit.

As with all Pardas wines, Mediterranean herbs and refreshing salinity are highly evident on the palate.
