The Vibe Paganilla is the most inland of the Atlantic pagos in the Marco de Jerez Barrique Fine Wines — which makes it a contradiction in terms. Inland enough to build concentration and structure, close enough to the Atlantic to retain the piercing salinity and marine energy the UBE range is built on. At just over 23 hectares, it is one of the smallest pagos in the region, historically always in the hands of small growers with dispersed plots. Wine-Searcher This is 1,000 bottles of it.

The Taste Crisp and precise, with high acidity and a pronounced mineral character — Atlantic in spirit, muscular but elegant. The marine fossil minerality is not metaphor: the albariza soils here have an exceptionally high concentration of diatoms — fossilised microorganisms from an ancient inland sea — that drive both the structure and the distinctive chalky salinity. More complex than UBE Miraflores due to the higher diatom concentration and the pago's Atlantic positioning— this is the most tension-driven white in the UBE lineup.

The Story Grapes from both plots are hand-harvested in early September, whole-cluster pressed into 1,000-litre old Jerez botas, and fermented spontaneously without temperature control. The wine then ages eight months in barrel, including four months under a natural veil of flor. The hilltop plot on Tosca de Barajuelas soil — planted in 1959 — sits at the highest point of the pago; the second plot on Tosca Cerrada anchors the south corner with denser, more concentrated chalk.  Bottled unfined, no added sulphur. First produced in 2018 — one of the youngest wines in the UBE series. 

Best Enjoyed With Serve at 8–10°C in a wider glass. Fresh oysters, grilled sardines, seafood crudo, or simply a bowl of Marcona almonds. The fossil minerality makes it one of the most precise shellfish wines in the Cosecha portfolio.
