The Vibe This is one of our hightest rated wines, and with good reason. Palo Blanco is the name of the viticultural zone within Los Realejos — an area famed specifically for the quality of its Listán Blanco. This is not a coincidence. Envínate source grapes from five different plots, with the highest vineyards reaching 850 metres, on black volcanic basalt soils with Atlantic humidity that no mainland Spanish wine region can replicate. At 98 points Wine Advocate it is, by any measure, one of the finest white wines produced in Spain!

The Taste Vibrant, fresh, and precise — the 2022 vintage in Los Realejos ran cooler and later than the rest of Tenerife, insulated from the August heat by altitude and Atlantic exposure. The nose opens with a light reductive quality that resolves into flowers and herbs; the palate is electric, saline, and linear. Whole clusters are pressed, the juice settled overnight, then fermented without skins or malolactic conversion in large concrete tanks with indigenous yeasts — no temperature control. Ten months in two 2,500-litre oval Friulian foudres builds texture without interrupting the wine's volcanic nerve. Bottled unfined, unfiltered, minimal sulphur. 13,000 bottles and 167 magnums produced. 

The Story Envínate — "wine yourself" — is the project of four friends: Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez, who met studying oenology at the University of Miguel Hernández in Alicante. Roberto Santana lives full-time in Tenerife, farming year-round rather than arriving at harvest. The vines are over 100 years old and trained in the cordón trenzado — a plaited braiding system unique to the Canary Islands that promotes airflow through the canopy and is found almost nowhere else in world viticulture. The soil is worked entirely by hand without chemicals. Palo Blanco is not a wine with a style. It's a wine with a place.

Best Enjoyed With Serve well chilled at 8–10°C in a wider glass. Fresh oysters, grilled sole, salt cod, or simply on its own. The saline precision makes it one of the most serious seafood whites available in Ontario.
