The Origin: Salia is Finca Sandoval's village wine. The estate was founded in 1998 by the wine writer Víctor de la Serna and winemaker Rafael Orozco near Cuenca in Manchuela; since 2019 Javier Revert has run the winemaking, keeping only the best Syrah parcels and grafting the rest over to Bobal and other native varieties. The vines, from 10 to more than 85 years old, grow on sandy clay-limestone at about 600 m. Garnacha joins the blend for the first time in 2024, from young head-pruned vines.

The Profile: Powerful, fruit-driven and juicy, with a sharp herbal note (in Côte-Rôtie it gets called raspberry leaf) that keeps it fresh. Well built, with plenty of fine-grained tannin and an earthy, darker seriousness. 14% alcohol, pH 3.7, 5.21 g/l acidity. 92+ points, Wine Advocate, whose verdict is that it needs time. Earlier vintages: 93+ (2022), 93 (2020), 90 (2019).

The Craft: 50% whole clusters, foot-trodden, with 15 days of maceration, then matured in 300-litre French oak barrels and 2,500-litre oak foudres. Organic since 2015, certified 2020. 15,500 bottles.

The Pairing: Give it a few years in the cellar or an hour in a decanter, and serve at 16–18°C with braised lamb shoulder, venison, wild boar stew, or an aged Manchego.
