One estate, one grape, three ways. Celler Pardas is Ramon Parera and Jordi Arnan's farm at Can Comas, in the Riudebitlles valley of the Alt Penedès, worked organically since 1996. Xarel·lo is the Penedès's own white grape, and Pardas makes it still, on its skins and sparkling. Two bottles of each.

In the case
2 × Pur Xarel·lo 2021: the still one. 100% Xarel·lo from vines over 60 years old on limestone, fermented in 500-litre oak and a concrete egg. Savoury and focused, and more mineral the longer it sits in the glass. The first wine Pardas made, in 2004. 12.5%. 93 pts.
2 × Polar Boar: the skin-contact one. 100% Xarel·lo, two weeks on its skins, which gives it a light tea-like grip. Satsuma, Meyer lemon and wild herbs, zesty and saline. A Cosecha collaboration: Jason has worked harvest at Can Comas since 2016.
2 × Hermós Corpinnat 2021: the sparkling one. 80% Xarel·lo, 20% Sumoll, co-fermented and aged more than 40 months on its lees. Dense and saline, with fine, plentiful bubbles. 95+ pts.

The spectrum: the same grape pressed off its skins, left on them, and given bubbles. Open Hermós as the aperitif, then Pur Xarel·lo, then Polar Boar with dinner.
