One estate, from white to red. Celler Pardas is Ramon Parera and Jordi Arnan's farm at Can Comas, in the Riudebitlles valley of the Alt Penedès, worked organically since 1996. This pack runs from the estate's saline white, through Sumoll, the Penedès's own red grape, to the Cabernet Franc-led flagship. Two bottles of each wine.

2 × Rupestris 2024: the white one. 60% Xarel·lo and 40% Malvasia de Sitges, fermented in concrete with no oak. Saline, textural and bone-dry. 11.5%. 92+ pts.
2 × Sus Scrofa 2023: the light red. 100% Sumoll, fermented in concrete with no oak. Wild strawberry, flowers and herbs, with fresh, biting tannins; our clients often compare it to cru Beaujolais. 12%. 93 pts.
2 × Negre Franc 2019: the structured red. 77% Cabernet Franc, 19% Cabernet Sauvignon and 4% Sumoll. Ten months in used French oak, then years in bottle before release. 14.5%.

The spectrum: lightest to fullest, from 11.5% to 14.5%. Open Rupestris first, then Sus Scrofa slightly chilled, then decant the Negre Franc.
