The Origin: Sus scrofa is Latin for wild boar, the animal on every Pardas label and a regular in the Can Comas vineyards. This is 100% Sumoll, the Penedès red grape that Pardas has championed for years, from the Cementiri (planted 2001), Fages (2014), Ribas, Torner and Coster Nou parcels on very poor chalky clay. The Profile: Sumoll is about fluidity and fresh, biting tannins, and this one has both: wild strawberry, flowers and herbs, with the estate's salinity and a fine-boned, elegant palate rather than anything rustic. If Sumoll is new to you, our clients often compare it to cru Beaujolais. 12% alcohol, pH 3.35. It is light on its feet and never tastes hot. 93 points, Luis Gutiérrez, The Wine Advocate. The Craft: 2023 brought heatwaves and drought, but it was a very good year for Sumoll, a grape that handles heat well. The grapes ripened slowly and the berries came in very small. Ramon has seen that in extreme heat, Sumoll and Xarel·lo slow their ripening rather than pile on sugar, so the hot years have not pushed the alcohol up. Hand-picked, destemmed, and moved into tank by gravity. Spontaneous fermentation in concrete, no fining, no oak at all; raised for a few months in century-old concrete tanks. 12,800 bottles. Vegan.

The Pairing: Serve slightly chilled, 14–16°C. Charcuterie, grilled sausages, roast chicken, mushrooms, seared tuna, or pizza. Flexible enough to open with almost anything.
