One estate, three sparkling wines, two bottles of each. Mas Candí farms old organic vines in Les Gunyoles, at the edge of the Garraf Massif in the Penedès. The grapes are the Penedès's own, Xarel·lo above all. The difference between the three wines is how long each one spent with its yeast before it reached you.

In the case
2 × Tinc Set 2025: the young one. Macabeu, Xarel·lo and Parellada made by the ancestral method. It has a single fermentation that finishes in the bottle, and it is never disgorged, so the yeast stays in and a little haze is normal. No added sulphites. Apple and ripe fruit, bone dry. 10.55%.
2 × Segunyola 2021: the village one. 100% Xarel·lo from vines over 65 years old, planted by the winemakers' grandparents. Four years on its lees. Fennel, aniseed and wild herbs, with high acidity and a bone-dry finish. 11.45%. 93+ pts.
2 × Indomable 2018: the long one. Half Xarel·lo, half Sumoll. Sumoll is a red Penedès grape, pressed straight off its skins so the wine stays pale. Six and a half years on its lees. Red fruit, brioche and baked apple, with a balsamic edge. 12.14%. 92+ pts. 4,000 bottles made.
