The handpicked organically grown grapes are fermented in stainless steel using natural yeasts. The wine is then aged for 8 months in 10% French tonneau and 90% stainless steel.

Cucu is a fresh, delightful young wine, bursting with bright citrus zests, bitter melon, herbs, and cool mineral nuance, courtesy of the 718 meters of altitude and siliceous sands and stones over clay and limestone subsoils.

In the mouth there are hints of grass, stone fruit and flint. And as the wine warms, the Verdejo aromatics develop, as the balance of fruit and acidity delight the palate.

Tio Uco is 100% Tinta de Toro (Tempranillo), growing in clay and limestone soil, sourced from three sites in Toro. Hand harvested and de-stemmed, there is a 24-48 hour pre-fermentation maceration, followed by a native yeast fermentation and 20 day maceration.

Alvar is making unusually fresh wines in Toro using organically farmed 25-40 year old vines. With only a gentle maceration, the wine is aged for 5 months in neutral French oak barrels.

Aromas are wild and heady, full of fermenting berries, black cherry compote, incense and clove, with a jazzy, light opening, dissolving into a fun and full flavoured palate of cassis, cranberry, cola, salt plums, balsamic, wild rose, and bitter herbs on the finish.

Substantial and spicy, but light on its feet, this is a lovely Toro for everyday drinking pleasure.

Primarily Monastrell (Mourvedre), in any given vintage, 8-15% of the blend includes Syrah and Garnacha. After a natural fermentation in tank the wine is aged for 8-9 months in neutral 500 liter French oak barrels, concrete tanks or foudre.

"Like all the wines from the property, fermented with indigenous yeasts, in this case with grapes from different plots, and matured in used oak barrels for eight to nine months Juicym primary, incredibly fresh with a vertical palate, longer than wider, like a hypothetical blend of 2013 and 2015, cool but dry. This is always great value.

In Jumilla, the Monastrell grape thrives in the dry climate and rough chalky soil.

Estancia del Silencio conveys plum, blackberries, and figs on the nose while the palate brings crisp structure and a touch of baking spices.

Josep Serra gives us a fantastic textured Mediterranean white, beautifully rich, yet free of excess glycerol and florality. In DO Terra Alta, Josep grows Garnacha Blanca from several plots around the village of Gandesa, in the locale known as Aucalà. The landscape here is dominated by Mediterranean pine.

The wine features lovely fruit- juicy and fine in the cut green apple and green melon spectrum. The palate is textured and savoury without cloying. It’s waxy and deep with nice lift and a wonderful, textural acid line showing off the fresh chalky-mineral soil.

There’s very well controlled build, which honours line above all. It’s limpid and beautifully nuanced with saltiness reflecting the former sea bed soils.

Catanga is an organic red Tempranillo wine produced by winemaker Jorge Pradillo for Long Wines. The name Catanga refers to the ancient, small traditional stone huts in where the grapes were stored in this part of the Spain, Castilla-La Mancha.

This stony soil and the dry climate allow the winery- one of Europe’s biggest organic wine projects – to produce high quality, crisp, mineral wines without the need for chemical pesticides.

Catanga is made from Tempranillo and is a fruit-forward, very pure and clean wine. On the nose, elegant, very intense and fruity with complex aromas, principally those of wild red-berry fruit. Flavoursome, well-structured and well balanced with elegant and smooth tannins and a long finish.
